Airlines and hotels have employed dynamic pricing for years, filling seats and rooms at off-peak times with value deals – and now BigDish hopes to do the same with restaurants. Joost will share the recently listed group’s plans to disrupt the UK industry, and argue why squeezed operators could benefit from using a variable pricing strategy.

He will take part in a panel session focusing on the future of the hospitality sector, including dynamic pricing, managing food waste and harnessing customer data.

The panel will be hosted by Simon Iddon, former CIO at The Restaurant Group and will also feature Stephanie Lloyd from New World Trading Company, Noel Hunwick from Inamo Restaurants & Bars, Paul Jones from The Alchemist and Rebecca Wetten from Karma.
